Shrimp Orzo Pasta Salad

1 lb. orzo pasta, cooked al dente
2 large cucumbers, seeded, quartered lengthwise, and sliced
3 green onions, thinly sliced
1 pint grape tomatoes, halved
3/4 lb. feta cheese, crumbled
1 lb. medium shrimp, grilled or sauteed in garlic

Dressing
1/4 cup fresh dill
1/3 cup white wine vinegar
1/2 cup olive oil
3 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in the blender and blend until smooth.


Combine cooked orzo pasta, cucumbers, onions, tomatoes, feta, and shrimp. Pour dressing over the top and stir.
